True Theory Spirits is different. We're one of the few distilleries in Ontario — and in Canada — that actually makes our spirits from scratch. Every bottle. Every batch. From raw grain to finished product.

What "From Scratch" Actually Means

Most "craft" distilleries buy neutral grain spirits (NGS) — essentially industrial alcohol — from large producers. They dilute it, maybe redistill it, add flavouring, and bottle it as their own. It's legal. It's common. And it's not what we do.

At True Theory, we start with raw Ontario winter wheat sourced directly from local farmers. We mill it. We mash it. We ferment it. We distill it in our own copper stills. We cut it by hand, separating the harsh "heads" and "tails" from the smooth "heart." Then we bottle it ourselves, right here in Etobicoke.

That's grain-to-glass distilling. No shortcuts. No purchased alcohol. No mystery ingredients.

Why Local Ingredients Matter

We believe what makes a premium spirit isn't a fancy bottle or clever marketing — it's what's inside. And what's inside starts with the ingredients.

Our vodka is made from 100% Ontario winter wheat, grown by farmers we know by name. Winter wheat has a natural sweetness and clean character that industrial grain can't match. When you taste True Theory Vodka 750 mL, you're tasting Ontario — the soil, the climate, the craft of local agriculture.

True Theory Canvas Gin 750 mL features Collingwood juniper and a careful blend of Ontario botanicals. Northern Bounty Canadian Whisky 750 mL is distilled from Canadian-grown corn and aged four years in oak. Every ingredient is chosen for quality, not cost.
